That last one isn’t fried, it’s sautéed onions. And not even thoroughly sautéed. Seriously, your partner should consider taking cooking classes. Doesn’t have to be fancy, just the kind with which you can survive.

Some people like doing the olive oil thing, personally I think it makes the guac kind of greasy and disgusting. Tamping it down with a little plastic wrap works just fine.
